Ingredients

25ml Olive Oil
-
1-2 Garlic Cloves
-
15g Pine Nuts
-
5g Fresh Basil Leaves (swap these for mint leaves to create a mint pesto)

Plus 2 Lamb Shanks (alternatively, use lamb steaks)

This one's super simple... add all of the ingredients into a small food processor / blender and blitz to your preferred texture.
Lamb Shanks
Place the lamb shanks in a zip seal food bag and add the pesto. Massage into the lamb and leave in the fridge overnight.
Preheat the oven to 170°C, individually wrap each shank in foil and bake on a tray for 90 minutes.
Remove the foil and continue to cook for a further 30-60 minutes - be careful when opening the foil!
