Makes 2 portions - each portion contains:

Ingredients

30g Panda Flour®
-
30g Ground Almonds (these can be replaced with other milled nuts or seeds)

10g Baking Powder
-
20g Sweetener (an Erythritol & Monkfruit or Erythritol & Stevia mix)

1 Egg
-
100ml Almond Milk (or other milk of choice)

Optional: 1 tsp Vanilla Essence
Directions
Combine the dry ingredients in a small mixing bowl.
Add the remaining ingredients and stir until a smooth paste forms.
To pan fry:
Heat a non-stick pan or crepe pan (add butter if needed) and spoon small portions of the mix on top. We get 6 pancakes from this mix. Once bubbles begin to form on one side, use a spatula to flip them over to cook for 1-2 more minutes.
To oven bake:
You'll need two oven trays that are the same size. Place spoons of pancake mix on one of the trays (lined with greaseproof baking paper), then place another sheet of baking paper on top, followed by the second oven tray. Press down lightly and bake with the tray on top for 10-15 mins, until the pancakes are slightly golden on both sides.
