Cheese & Tomato Omelette
2 Large Eggs, whisked
50g Baby Cherry / Plum Tomatoes
30g Mature Cheddar, grated
Handful of spinach
Seasoning & spices to taste
In a frying pan, melt the butter on a medium heat and add the tomatoes and spinach.
Cook for 3-5 minutes and add the whisked eggs (mix any spices into the eggs before cooking).
As the eggs begin to firm, add the cheese on top.
Season and cook the omelette to your preference.
