Nut-Free Fluffy Pancakes / Waffles

These can be batch-cooked and stored in the fridge or freezer, or the mix can be stored in the fridge for a couple of days. Give the mix a stir before cooking - you may need to add a dash of milk if the mix is thick.
Makes 3 portions - each portion contains: 150 Calories / 2.8g Carbs / 10.9g Protein / 8.2g Fat
Ingredients

80ml/g Nut Free Milk e.g. Coconut (carton, not tinned) or Hemp

45g Coconut Flour

4 Large Eggs

1/2 tsp Vanilla Extract

1/2 tsp Baking Powder

Optional: 25g 85% Dark Chocolate
Directions
Combine the eggs and milk first then add the remaining ingredients. If adding the chocolate, chop it up into tiny chunks and add it to the mix.
If using a waffle maker, add a third of the mix (or less if your waffle maker is small) and cook for around 3 minutes until golden.
If using a pan, add some butter if it's prone to sticking. Pour one portion into the pan and heat - to start, make several smaller pancakes. Allow to cook until air bubbles start to appear in the top. Gently turn the pancake over to finish cooking.
