Cheesy crackers with a fantastic crunch! Out of all of our cracker and crisp recipes, these are definitely the most crisp even after a few days of storage. This recipe has been a hit since the OMG! Cookbook was released, and now we're bringing it to the free recipe library so everyone can have a good platter of cheese & crackers :D
We use whole psyllium husks rather than the powder because some brands of powder can turn your baking purple / grey. Psyllium husks are available in our Ingredients Collection :)
Makes 8 large crackers - each one contains:
126 Calories / 1g Carbs / 6g Protein / 10g Fat / 2g Fibre (already deducted from the carbs, like all UK foods)
Storage:
Store in an airtight jar or container in a cool cupboard or fridge for up to 1 week. Keep any moisture out of the container.
Ingredients

140g Mixed Seeds (we buy bags of mixed seeds - pumpkin, sunflower, linseed / flax & sesame)

5g Psyllium Husk (the whole husks)

1 Large Egg

30g Grated Cheddar (or another strong cheese like Manchego or Gouda)

Seasoning to taste
Directions
Preheat the oven to 180°C.
Add all of the ingredients to a bowl and combine. Allow the mix to rest for 5-10 minutes - it will begin to thicken as the psyllium husk absorbs moisture.
Line an oven tray with greaseproof baking paper and spread the mix out as thin as possible. Score the crackers before baking - this will help separate them once baked.
Bake for 15 minutes, then flip the crackers over. Bake for another 10 minutes to make them crispy on both sides.
Break the crackers apart along the score lines, allow them to fully cool and store them in an airtight container in the cupboard or fridge.
