This stunning marinade works well with any white fish. The coconut milk version is our favourite but Greek yogurt or soured cream would work too.
Makes 1 portion:
Using coconut milk (62% coconut extract): 438 Calories / 11g Carbs / 45g Protein / 23.7g Fat
Using Greek-style yogurt: 382 Calories / 13g Carbs / 49g Protein / 15g Fat
Using soured cream: 456 Calories / 11.8g Carbs / 46.6g Protein / 24.7g Fat
Ingredients

190g Basa Fillet (or Cod or Haddock fillets)

50g Leek or Spring Onions, finely sliced

50g Red / Yellow Peppers, finely sliced

100g Coconut Milk (as high % coconut extract as you can get) - can be swapped with Soured Cream or Greek / Greek-Style Yogurt

5ml Lemon Juice

1/2 tsp Ground Cumin

1 tsp Ground Coriander
-
1/2 tsp Ginger Puree

1/8 tsp (a pinch) Cayenne Pepper
Directions
Preheat the oven to 180°C.
Spread the peppers & leek / spring onions on the bottom of a small oven-proof dish.
Lay the fish fillet either in small strips or as while fillet over the peppers & onions.
Mix together the coconut milk, lemon juice and spices and evenly spread them over the fish.
Cover the dish with foil and bake for 25-30 minutes.
E straight from the dish or use a spatula to lift from the dish. Don't discard the excess liquid! Serve with a selection of low carb veggies / salad and dress with the infused liquid.
