Swap the cod for any other white fish, white meat like chicken breast or turkey steak, or even go for a hard cheese like halloumi.
Makes 2 portions - each portion contains:

Ingredients

2 Boneless & Skinless Cod Fillets

1/2 tsp Paprika
-
10g Fresh Parsley, finely chopped (or 1 tsp Dried Parsley)

1/4 tsp Chilli Flakes

1/4 tsp Garlic Powder
-
1/4 tsp Ground Cumin

15ml Olive Oil
-
Zest and juice of 1 small lime
Directions
Mix the oil with the spices, herbs, lime zest and half of the juice - save the rest of the juice as a dressing on the plate.
Place the cod fillets in a dish and spoon over the oil & spice mix. Allow this to sit in the fridge for 20-30 minutes minimum (overnight is best).
Preheat the oven to 180°C and cook for 15 minutes or fry in a good non-stick frying pan over a medium heat for 6-8 minutes. The fillet should be firm when fully cooked.
Serve with a fresh salad and drizzle with the remaining lime juice.
