Ingredients
-
300g Swede (this could be replaced with celeriac)
-
15ml Olive Oil
-
1/2 tsp Mustard Seeds
-
2 Green Chillies, thinly sliced
-
300g Cauliflower Florets, broken into bite sized pieces
-
10ml Lemon Juice
-
1 tsp Ground Turmeric
-
2 tsp Kashmiri Chilli
-
15g Fresh Coriander, roughly chopped
Directions
Remove the skin from the swede and cut it into bite sized chunks. Parboil these for 8-10 minutes. You want them to be cooked but still firm.
Heat the oil in a frying pan over a medium and add the mustard seeds. Cook them until they start to pop.
Add the chilli, swede, cauliflower, lemon juice, turmeric, Kashmiri chilli and some of the coriander (save some for sprinkling on the dish).
Combine well and add 100ml water if the mix is too dry.
Cover with a lid, reduce the heat to low, and cook for 10-12 minutes. Check during cooking to ensure that the mix isn't dry, and add more water if needed.
Season with salt (this dish generally needs about 1/2 tsp but season to your taste).
