It's like coleslaw... without the mayo... and baked. So not much like coleslaw. But it uses cabbage.

Makes 2-4 portions. If dividing into 4 portions, each one contains:

As with all UK labels, the carbs above are already net carbs - do not subtract the fibre.
Ingredients

150g Cabbage

50g Carrot

50g Leek

2 Eggs

50ml Water
-
25g Double Cream

15ml Olive Oil

1 tsp Baking Powder

1 tsp Mixed Herbs

Salt & Pepper

20g Panda Flour

60g Cheddar Cheese
Directions
Preheat the oven to 200°C.
Finely slice or grate the cabbage, carrot & leek.
Wash and drain the veg, then transfer it to a baking dish. We use an 8” round dish which fits our Ninja Foodi.
In a mixing bowl, add the eggs, water, cream, olive oil, baking powder, herbs, salt & pepper. Whisk together.
Add the Panda Flour and whisk again. This should start to thicken the batter.
Pour the batter into the oven dish, over the vegetables. Combine everything together, then press the mixture down with a spatula or your hand.
Bake for around 15 minutes, then top with the grated cheddar, and bake for another 5-10 minutes until golden!
