The key to this salad is consistency; decide how large you're going to cut the veg, and continue that theme all of the way through - this makes it easier to pick up a fork.
Makes 4 portions - each portion contains:
71 Calories / 3.6g Carbs / 1.1g Protein / 5.5g Fat
100g Red Bell Pepper
100g Green Bell Pepper
5g Flat Leaf Parsley
20ml Olive Oil
Salt to taste
Lots of freshly ground black pepper
Chop all of the veg. We chop it into 1cm cubes.
Add the chopped veg and parsley to a bowl and season with salt & olive oil. You don't want the salad to be swimming with olive oil - just enough to coat the veg.
The final piece to this amazing salad is freshly ground black pepper. Be generous!
