This is a deconstruction of the original Branded recipe, as far as I know, from looking at the ingredients label and looking at other people's full carb research. This is my low carb take on it. Hope you like it as much as we do. Remember the taste will mature, the longer you leave it :-)
~
Per 100g:
40 Calories / 8g Carbs / 1.5g Protein / 0.3g Fat
~
Per 15g portion - 1 tablespoon (Approx. 30 portions)
7 Calories / 1.4g Carbs / 0.3g Protein / 0.1g Fat

Ingredients
125g Swede - chopped into small cubes * Swede takes longer to cook than all the other vegetables. So chop these first and start boiling them in some water for at least 20 minutes whilst you prepare the other vegetables
100g Courgettes, leave the skin on - chop into small cubes
100g Low carb pickled gherkins, mine were 2.8 carbs per 100g - chop into small cubes
50g Cauliflower - chop into small chunks
50g Cooking apples - chop into small cubes
40g Spring onions - finely chopped
35g Dates- finely chopped & whizzed up until smooth in 100ml water
70g Brown granulated sweetener - picture of the sweetener is in the photo above - add more sweetener if needed after the hour of cooking * This sweetener is well worth buying anyway, as I really don't think it has an aftertaste and will be useful for all sorts of deserts. I'm thinking creme brulee! I bought mine from Tescos
15g / 1 Tbs Tomato Puree
15ml / 1 Tbs Fresh Lemon Juice
1 tsp Fresh ginger - finely chopped
1/2 tsp Fresh garlic, finely chopped
1/2 tsp Mustard - I like to use English mustard
1/2 tsp Ground All spice
1/4 tsp Cayenne pepper
1/4 tsp Salt
250ml Malt Vinegar
Directions
Firstly start cooking the Swede, for at least 20 minutes, it takes a lot longer to cook than the other vegetables & drain
Add all the ingredients to a large saucepan and stir well
Bring to boil and simmer on a medium heat for at least an hour until all the vegetables are cooked, stirring occasionally. It's ok if there's a little crunch in them. Your choice! If it seems too dry, add a tiny bit of water to loosen it up a bit
Meanwhile, sterilise your jars, with some boiling water
Fill the jars & enjoy :-)
It's ready to eat immediately, but these flavours will mature in time

Looks a great recipe, Morrisons sell bags of frozen small cubed Swede (raw), would be an ideal time saver for this recipe
