This is a simple custard tart recipe. There are so many recipes out there, that it's hard to say which one works best. Some are all milk, some all cream, but this combination of cream and milk seems to work best for me. The other thing that I like to do, is to add nutmeg to the custard and sprinkle on top

These tarts don't rise much, so make sure that you fill these pastry cups / large tin right to the top, as when it cools, it will shrink back a little

Tips & Equipment list:
A Bullet, hand blender or food processor is handy
You can either make this a 1 big tart or 12 individual portions, so either an 8 inch spring based tin or a 12 portion muffin tray
Ingredients

150g Ground almonds

30 - 40g Truvia / Natvia / Pure Via Sweetener

1/2 tsp Xanthan gum

75g Butter, straight from the fridge and cut into small cubes

1 Large egg

1 tsp Vanilla essence
-
30g Coconut flour
-
3 Large eggs
-
15 - 20g Truvia / Natvia / Pure Via Sweetener

1/8 tsp Salt
-
2 - 3 tsp Vanilla essence

125 ml Double Cream
-
175 ml Milk - I used Lactose free milk

1/2 tsp Nutmeg

Preheat the oven to 180°C or Ninja 170C
- Add all of the dry ingredients (except the coconut flour) to a food processor and mix.
Add half of the butter, blitz for just a few seconds, then add the remaining butter and blitz again - the mix should now resemble large bread crumbs.
Add the egg and vanilla essence and mix for 15-20 seconds so the mix starts to form a dough.
- Transfer this to another bowl and add the coconut flour. Mix using a spatula or a spoon - this will thicken the pastry.
- Roll out the pastry between 2 sheets of greaseproof paper.
Line a non-stick oven proof dish or 12 cake tins with the pastry and gently press it into the sides of the dish. It will possibly break as you're doing this - don't worry, just use spare pieces of dough to patch-work it back together.
Pop in the Ninja for about 3 minutes and about 5 - 7 minutes middle shelf of a regular oven
Custard Filling
Turn the oven down to 170°C or Ninja 160C
Add all the ingredients to a large mixing bowl and mix till smooth, apart from 1/2 of the nutmeg (1/4 tsp)
Divide the custard between your tins or 1 tin & sprinkle the remaining nutmeg over the top of the custard
If your cooking 12 tarts these will cook a lot quicker than 1 large 1 Tart
Ninja 160C

1 large tart 30 - 40 minutes

Oven 180C
12 for approx 20 - 25 minutes
1 large tart 30 - 45 minutes
Allow to cool before removing from the tin
