This is a lovely, dense cake that pairs nicely with homemade jam. It's not overly crumbly, but it's not a Victoria-sponge-like cake either.
Makes 16 squares - each one contains:
192 Calories / 1.3g Carbs / 5.6g Protein / 18.4g Fat

Ingredients
150ml Olive Oil
3 Large Eggs
3 tsp Almond Extract
250g Ground Almonds
1/2 tsp Bicarbonate of Soda
Pinch of salt
Directions
Preheat the oven to 170°C (reduce this to 150°C if you're using a fan oven).
Add the olive oil, eggs and almond extract to a nutri-bullet style blender. Blend for a few seconds until it forms a runny mayonnaise.
Mix the dry ingredients together in a bowl.
Add the egg & oil mixture to the dry ingredients and mix until fully combined.
Line an 8" brownie tin with greaseproof paper and pour in your cake mix.
Bake for around 40 minutes until firm.
Baking in the Ninja Foodi
I split the mix into two and bake in a small loaf tin (only one fits in the Ninja at a time). Alternatively, line a round cake tin (7-8").
Use the Bake function at 150°C. Bake for 25-30minutes, checking at the 25 minute mark to see if it's firm.
