Layer 2 also makes a fantastic little pudding on its own - I divide the mix into little 100ml pots for portion control. It sets like a mousse... hence the name Angel Mousse Trifle!

Ingredients

1 Packet Hartley's Sugar Free Jelly Powder (around 10g)

Boiling Water

150g Frozen Berries

1 Packet Hartley's Sugar Free Jelly Powder (around 10g)

280ml Boiling Water

250g Double Cream
-
250g Greek or Greek-Style Yogurt

150g Double Cream

Truvia / Natvia / Pure Via Sweetener if needed

Layer 1
Make up 1 packet of jelly as per packet instructions.
Ad the frozen berries to a trifle dish and pour the jelly mix over. Refrigerate until set.
Layer 2
Mix the jelly and water to dissolve the jelly.
Let it cool and then add the cream and yogurt.
Whisk this up in a large mixing bowl using an electric whisk. It will still be runny, but frothy.
Pour this over the set jelly and allow to almost set (this takes around 30 minutes).
Layer 3
Whisk the cream with an electric whisk until soft peaks form. Add sweetener if needed and mix this in.
Spoon the whipped cream over the (almost) set angel mousse mixture.
Decorating is optional - I used grated dark chocolate, toasted almonds and berries.
