These can be made egg-free (as seen in the photo) by using about '3 eggs' worth of egg replacement.
Makes 16 brownies - each brownie contains:
140 Calories / 3.6g Carbs / 3.6g Protein / 12.1g Fat

Ingredients

250g Avocado Flesh

40g Cocoa Powder

90g Ground Almonds
-
35g Coconut Oil
-
100g 85% Dark Chocolate

1/2 tsp Vanilla Extract

2 Large Eggs (see the description for alternative)
Directions
Preheat the oven to 190°C.
Melt the dark chocolate and coconut oil in a bowl over a pan of boiling water or in the microwave. If using a pan, make sure that no water gets into the chocolate mixture. Allow to cool slightly.
Using a food processor, blend the avocado until smooth.
Add the eggs, vanilla extract and cocoa powder. Process again until smooth.
Gradually add the melted chocolate / oil mix while the food processor is on to mix the ingredients.
Finally, add the ground almonds and sweetener and blend. The mixture should resemble a thick mousse.
Spread the mix into a square 8" tin, lined with greaseproof paper. Bake for 20-25 minutes. If you want the brownies extra gooey, reduce the cooking time a little.
Allow the brownies to fully cool before cooking as they're quite fragile. They firm up once they're in the fridge.
