This is a fantastic (but very more-ish) loaf that goes incredibly well with a pouring of double cream, Greek or Greek-style yogurt, or Ella's favourite (much to Mark's horror)... peanut butter! To reduce the carbs slightly, swap the blueberries for cacao nibs or chopped 85% dark chocolate.
Makes 12 slices - each slice contains:
146 Calories / 1.7g Carbs / 4.9g Protein / 13g Fat
Ingredients

150g Ground Almonds (or other milled nuts / seeds - be aware that this may change the colour of your loaf. Strong flavours like linseed aren't recommended.)

3 Large Eggs

70g Butter - melted & cooled

1 tsp Baking Powder

Banana Essence - we use 20 drops of the Flavdrops from MyProtein.

15g Truvia / Natvia / Pure Via Sweetener (adjust to taste)

50g Fresh Blueberries or 30g Cacao Nibs
Directions
Preheat the oven to 170°C.
Melt the butter and set aside to cool.
Mix the dry ingredients together and add the eggs.
Add the butter and blueberries and mix again.
Pour the mix into a small lined loaf tin. Ours is 9cm x 15cm.
Bake for 20-25 minutes or until firm.
Allow to cool on a rack and slice.
