Let us warn you now... these are calorie dense! We like to keep these in the freezer so we don't grab one every time we go to the fridge :D
Makes 20 portions - each portion contains:
124 Calories / 0.8g Carbs / 1.2g Protein / 12.6g Fat
60g Unsalted Butter
90g Double Cream
200g Crushed Nuts (we like to use pecans) - either blitz these in a food processor or crush them by hand e.g. in a pestle & mortar
50g 85% Dark Chocolate
In a medium size pan which you are able to whisk in, melt the butter. Allow it to turn golden brown. There's no need to stir it at this point.
Reduce the heat and add the cream whilst whisking. Whisk for 20-30 seconds and then add the sweetener.
Turn the heat back up, continuing to whisk, and allow it to come to boil - this will bubble and thicken, turning golden brown. This process will only take 3-4 minutes from start to finish.
Add the crushed nuts to the caramel and stir to coat them.
Divide the mix into little silicone moulds or ice cube trays. Put them in the freezer to set for around 10 minutes.
Whilst the clutters are setting, melt the chocolate and allow it to cool slightly.
Drizzle the chocolate over the clusters.
Place them back in the fridge or freezer to set.
