Ingredients
-
100g 85% Dark Chocolate
-
80g Unsalted Butter
-
60g Double Cream
-
3 Large Eggs (for nut free brownies, increase this to 4 eggs)
-
70g Ground Almonds (for nut free, swap the ground almonds for 25g Coconut Flour)
-
1 tsp Baking Powder
-
1 tsp Vanilla Extract or other extract of choice - coffee, orange or mint extract are great choices!
-
20g Cocoa Powder
Directions
Preheat the oven to 180°C.
Melt the butter and chocolate in the microwave or over a pot of boiling water (make sure no water gets into the chocolate). If you’re using the microwave, use 30 second bursts and mix occasionally to avoid burning the chocolate.
Add the cream to the melted chocolate / butter and stir. This will cool the mix down.
Add the remaining ingredients and mix until smooth.
Line a brownie tray with greaseproof baking paper and pour the mix in. Evenly spread it in the tin.
Bake for around 15 minutes. the top should be just firm to touch - if you bake them for less time, you'll have super gooey brownies :D
Allow to cool a little and then cut into squares.
