Ingredients

100g Avocado Flesh (over-ripe is best)

50g 85% Dark Chocolate

15g Coconut Oil (we use cooking coconut oil which has no taste or smell)

20g Cocoa Powder

1/2 tsp Vanilla Extract (plus any additional flavourings e.g. orange essence)

20g Crushed Pecans or Hazelnuts (or other nuts - I blitz these in the nutri-bullet for just a second or two)
Directions
Melt the chocolate and coconut oil in the microwave (in 30 second bursts) or over a pot of boiling water.
Roughly chop the avocado, add it to a small food processor and blitz into small chunks.
Add the melted chocolate and oil to the avocado and blitz again. You may need to use a spoon to scrape some mix off the sides of the processor to allow it to combine fully.
Add all remaining ingredients (except the crushed nuts) and blitz for a final time. Taste the mix and adjust the flavourings at this point.
Pour the crushed nuts into a small bowl.
Take a small chunk of the mix (around 10g) and gently roll it into a truffle with your hands. Place the truffle in the crushed nuts and shake until fully coated. Repeat until all of the mix has been used up.
I like to store these in the freezer - that way I'm not tempted to eat one every time I open the fridge!
