Makes 8 portions - each portion contains:

Ingredients

100g Nuts of your choice (almonds, pecans, brazil, hazelnuts) - we prefer using flaked almonds, whole pecans and whole hazelnuts.

60g Milled Linseed

25g Coconut Oil or Butter

1 Large Egg
-
25g 85% Dark Chocolate
Directions
Preheat the oven to 180°C.
Chop the nuts of your choice in a food processor. You still want some chunks to give the bars more of a crunch. We would add whole almonds, hazelnuts, or brazil nuts before pecans as the latter takes less time to break down. We don't add flaked almonds to the processor as we prefer to leave them as they are :)
Transfer the nuts to a mixing bowl. Add the linseeds and sweetener and mix.
Melt the coconut oil or butter and add this to the mixing bowl, coating the nuts & seeds.
Crack the egg into the bowl and combine with the rest of the mixture.
Press the mixture into a lined oven mixture (we use a round 7" tray) and bake for around 15 minutes or until golden brown. You may want to flip them over to brown on both sides, depending on your oven.
Melt the dark chocolate and drizzle on top of your baked granola bars.
Allow the chocolate to solidify before cutting - the solid chocolate helps to reduce crumbs when chopping up.
