Nut Free / Dairy Free
Whilst these are based on our marzipan recipe, you can remove the almond taste entirely by using ground pecans or milled seeds (this will make them nut free) and vanilla extract.
Makes 20 biscuits - each one contains:
103 Calories / 1g Carbs / 4.2g Protein / 8.8g Fat
Ingredients
-
300g Ground Almonds (or other ground nuts / seeds - ground pecans work nicely). To mill these, simply blitz them in a nutri-bullet style blender for just a few seconds.
-
2 Medium Egg Yolks
-
40-60ml Water
-
Flavouring of choice: 1 tsp Almond Essence or Vanilla Extract, or add a spice e.g. 1 tsp Mixed Spice or 1 tsp Ground Ginger
Directions
Preheat the oven to 200°C.
Add all of the ingredients to a bowl and beat them together until a doughball forms.
Roll out the dough between greaseproof / silicone sheets.
Use a cookie cutter to cut out your biscuits and place on an oven tray lined with greaseproof baking paper. To make hanging decorations like the ones in a photo, make a hole in the dough with a straw.
Bake for around 15 minutes until slightly crispy. They will crispy more as they cool. Keep an eye on them to make sure they don't burn!
