This is a recipe that gets better with age... it's fantastic on day 1 but the flavours intensify over time. We can't say what happens after day 3 though, because we've never got that far...
Makes 12 slices - each slice contains:
182 Calories / 1.4g Carbs / 2.8g Protein / 18.3g Fat
50g Unsalted Butter
50g Ground Almonds (or other milled nuts / seeds)
50g Milled Linseed
150g Mascarpone (this can be substituted with cream cheese)
2 heaped tsp Instant Coffee mixed with 60ml warm water, set aside to cool
100g Double Cream
25g 85% Dark Chocolate
Preheat the oven to 170°C.
Melt the butter in the microwave and add the ground almonds, linseed & sweetener.
Line a 7" circular cake tin and press in the base mix. Bake for 10-15 minutes until the base is slightly golden.
Once cooked, remove from the oven and allow to fully cool.
Mix all of the ingredients together until smooth. Once the base has fully cooled, add this on top and spread evenly.
Heat the cream in the microwave for 60 seconds with a lid on.
Break the dark chocolate into small pieces and add this to the heated cream. Stir to melt the chocolate.
Allow the ganache to cool for at leas 15 minutes before pouring this over the middle layer.
Allow the tart to set in the fridge for a minimum of 2 hours - overnight is preferrable.
