Nut Crunch Cookies
60g Unsalted Butter
40g Crunchy Almond Butter (100% nuts)
1 Large Egg
1 tsp Vanilla Extract
100g Ground Almonds
40g Flaked Almonds
1/2 tsp Xanthan Gum
Optional: 25g 85% Dark Chocolate
Preheat the oven to 180°C.
Melt the butter and almond butter in the microwave and mix them together.
Add the remaining ingredients and mix until it forms a dough.
If you fancy chocolate chips, finely chop the dark chocolate and mix this in.
Use wet hands to press pieces of the dough into cookie shapes on a tray lined with greaseproof baking paper. Make them as thin as you can.
Bake for 10-15 minutes until golden and slightly crispy. They'll firm up more as they cool.
