Lots of keto mousse recipes use double cream or mascarpone. Whilst they're delicious, some find them a bit too heavy. Here's a lighter version that's just as tasty :D

Prep Time
10 minutes
Storage: Fridge for 2-3 days. You may need to give it a mix to re-incorporate any water.
Makes 2 portions - each portion contains:
212 Calories / 7.6g Carbs / 12.8g Protein / 14g Fat / 0.6g Fibre (as with all UK labels, this has already been deducted from the carbs)
Of course, as we're using (naturally) lower fat dairy products, this mousse may fall into a 'low carb' lifestyle rather than a strict 'sub 20g carbs' keto lifestyle. If you're looking for mousse recipes that are even lower in carbs, check out these.
Ingredients
-
250g Ricotta (full fat)
-
50g Greek or Greek Style Yogurt (full fat)
-
20-30g Cocoa Powder (adjust to taste and until the mousse is desired thickness)
-
10-20g Truvia / Natvia / Pure Via Sweetener (adjust to taste)
-
Optional: 1 tsp Instant Coffee Powder (adjust to taste)
-
Optional: Essences such as orange essence - add to taste (start with 1/4-1/2 tsp)
Directions
Add the ricotta and yogurt to a mixing bowl and gently mix to incorporate any excess water.
Add the remaining ingredients and mix well until smooth. Adjust the quantities of the ingredients to suit your preference.
This mousse is even nicer if left to chill... but we're usually too impatient!
