To make mini Victoria Sponges, split the cake mix between six 2.5" tins. Baking instructions are below.

Ingredients

100g Soft Cream Cheese

60g Softened Unsalted Butter

60ml (60g) Unsweetened Almond Milk

3 Large Eggs
-
130g Ground Almonds
-
20g Coconut Flour
-
2 tsp Lemon Juice
-
1 tsp Vanilla Extract

1 tsp Baking Powder
Filling

45g Softened Unsalted Butter
-
100g Double Cream
-
1 tsp Vanilla Extract

120g Homemade Jam or Cooked Mixed Berries or Fresh Berries
I used the jam recipe on page 98 of Creative Bakes cook book) Plus additional berries for decoration
Directions
Preheat the oven to 170°C
Add the cream cheese and butter to a bowl. Whisk until soft peaks form. I use an electric whisk or, if you're feeling energized, use a spatula :)
Add the almond milk and eggs and mix again - don’t have the whisk on a high setting!
Add the remaining ingredients and mix.
Pour the cake batter into two 7” cake tins lined with greaseproof baking paper. If you only have one tin that size, bake half of the mix and allow it to cool slightly before removing the cake from the tin and pouring the rest of the mix in.
Bake for around 20 minutes until golden and firm to touch. If baking in 2.5” tins, check the cakes at around 10 minutes.
Once cooked, allow the cakes to cool slightly in the tins before removing them and placing them on a cooling rack.
Filling & Construction
Use an electric whisk to cream the softened butter and then add the double cream and vanilla.
Whisk until soft peaks form.
Taste the mix and add sweetener if required.
Ensure the cakes are fully cool, then evenly spread the buttercream (save some for the top) on the first cake layer. If your cakes have a dome shape, you may need to trim the top to create a level surface (snacks!).
Now add your jam on top of the buttercream.
Place the second cake on top.
Use the remaining buttercream to add fresh berries on top and finish with a sprinkling of sweetener.
