We always seem to have a pot of this in the fridge - it's a fantastic addition to a bowl of Greek-style yogurt, on toasted linseed bread, or on top of the fluffy pancakes.
This can be frozen (although Louis eats it too quickly for us to ever need to freeze it!)
Makes 25 portions - each portion contains:
16 Calories / 1.3g Carbs / 0.6g Protein / 0.7g Fat

Ingredients
500g Frozen Berries (mixed summer fruit, strawberries, raspberries, blackcurrants, etc.)
50g Chia Seeds
100ml Water
Directions
Add all of the ingredients to a medium saucepan. If the berries have been left to defrost for a while, you won't need the water.
Bring to the boil and then reduce the heat to low.
Simmer the fruit for around 30-45 minutes, uncovered. The jam will thicken as it cools.
For a smoother jam, use a hand blender to puree the fruit or mash with a fork.
Once cooled, store in the fridge. We tend to freeze some in small pots too.
