Our love of falafel comes from the many music festivals we've been to in the past decade or so. It was our staple Thursday night dinner, after we'd set up camp and walked around the festival site, picking out the places we'd like to visit over the weekend. Serve these with cheesy wraps to boost the protein :)
Makes 4 portions - each portion contains:
243 Calories / 6.8g Carbs / 14g Protein / 16g Fat
These do not account for fat absorbed whilst frying.
Ingredients

600g Broccoli (stalks, florets, or both) / Broccoli Rice

100g Ground Almonds

1 Large Egg
-
25g Chopped Fresh Coriander

2 tsp Ground Cumin
-
1 tsp Ground Coriander

1/2 tsp Turmeric
-
1 tsp Xanthan Gum (this can be found in the supermarkets but we also buy it online)

1 tsp Pink Himalayan / Rock / Sea Salt

Cooking Coconut Oil for frying (this has no taste or smell and is suitable for high heat frying. We get the KTC tubs from Morrisons)
Directions
Blitz the broccoli into rice using a food processor and place in a microwaveable bowl.
Cover the bowl and microwave for 4-5 minutes on full power to steam the broccoli. Remove the lid and allow to cool thoroughly before adding this back to the processor.
Add all other ingredients and blend to a thick but smooth paste. You may need to stop the processor
