The parmesan can be omitted or swapped for a dairy free alternative such as nutritional yeast.
Makes 4 portions - each portion contains:

Ingredients

100g Brazil Nuts

90g Whole Almonds (we prefer blanched almonds)

60g Hazelnuts
-
100g Carrot
-
100g Fresh Spinach
-
2-3 Garlic Cloves or 10g Garlic Puree

1 Large Egg
-
20g Parmesan Cheese
-
50g Sun-dried Tomato Pesto

2 tsp Dried Parsley
Directions
Preheat the oven to 180°C.
In a large food processor, add the nuts, carrot, garlic and spinach. Blitz until you have a roughly chopped mix. Don't over-mix it unless you want a smooth loaf.
If your food processor has a large mixing bowl then the remaining ingredients can be added directly into the bowl and mix or pulse for a few seconds. Otherwise, transfer the mix into a mixing bowl and stir the remaining ingredients in thoroughly. Season to taste.
Transfer into a lined loaf tin and press the mix down.
Bake for around 50-60 minutes. The loaf should be firm to touch with a crunchy outer.
Allow to cool for a few minutes before removing from the loaf tin.
