Chilli Con Carne in Ninja Foodi

Makes 4 portions - each portion contains:
366 Calories / 7g Carbs / 27.2g Protein / 25.7g Fat
Not including any soured cream added on top.
Ingredients

2 tbsp (30ml) Olive Oil

450-500g Beef Mince (15%)

100g Shallots, chopped

1 tsp Chilli Powder

1 tsp Ground Cumin
-
3 tbsp (45g) Tomato Puree

400g Tinned Chopped Tomatoes

1 Beef Stock Cube with 300ml Boiling Water

Fresh coriander - chopped
-
Optional: Soured Cream & Fresh coriander for serving
Directions
Using the sauté function on the Ninja, heat the olive oil in the main pan.
Add the chopped shallots to the pan.
Once softened, add the mince meat and cook for 5 mins, until browned.
Add the spices and tomato puree and cook for another minute.
Add the chopped tomatoes and stock, bring to the boil.
Reduce the heat and simmer for around 40 minutes, until the sauce is reduced and thick.
5 minutes before the end, add the coriander and season to taste.
Serve with swede rice / cauliflower rice with soured cream and coriander on top.
