Ingredients
250g Hard Block Mozzarella - labelled Pizza Mozzarella
25g Coconut Flour
2 Eggs, mixed up with a fork
50 - 60g Pork Scratchings
Seasoning
Directions
Oven 200C
Slice up your mozzarella into sticks / chips
Blitz the pork scratchings, to resemble bread crumbs, and pop into a bowl
Line up 3 bowls, 1 with coconut flour (seasoned), 1 with mixed up egg and finally your blitzed pork scratchings
Prepare to get sticky fingers for the next 5 minutes!
Coat the mozzarella sticks in the coconut flour, then egg, then the pork scratching and lay on a lined baking tray, with a small gap between each one
Bake until, golden brown and crispy (approx 10 - 15 minutes)
If freezing, freeze uncooked, and cook fresh
