These even look like mini cheddars, if you squint ! :-)

Ingredients

25g Ground Almonds / Golden Linseed / Milled Mixed Seeds

175g Grated Cheddar Cheese

10g Grated Parmesan

30g Coconut Flour
-
1 tsp Mixed Herbs
-
1/2 tsp Garlic Powder
-
1/2 tsp Paprika
-
1/2 tsp Salt
-
1/2 tsp Pepper
-
30g Salted Butter, melted
-
1 Medium Egg
Directions
Preheat the oven to 180c
Melt the butter in the microwave and leave to cool.
Add the ground almonds (or alternative), grated cheddar, parmesan, coconut flour, mixed herbs, garlic powder, paprika, salt, and pepper to a bowl and mix.
Then add the melted butter and egg. Mix again.
Place the mix onto the work top, form into a dough and kneed it for a couple of minutes until smooth.
Divide into 5 or 6 pieces
Roll a piece between two sheets of greaseproof paper or silicone sheets. It will be very crumbly, but as soon as you start to roll it, it moulds together.
Roll the dough until it's about 3mm thick.
Using your cutter, cut out the mini cheddars. You could prick these with a fork to give it a nice effect.
At this point the crackers are very fragile, so use a metal spatula to put them on the baking tray.
Cook on a lined tray for at least 10 minutes.
Adjust the time depending on your oven - mine took 15 minutes
Recipe Notes
These look lovely in little circles, but equally you could just cut them into squares to save time.
I got 80 mini cheddars from this mix.
