Crispy Coated Chicken Thighs
Preheat the oven to 200°C or the Ninja Foodi (air crisp) / Air Fryer to 180°C.
In a large bowl, mix the the vital wheat gluten with the spices & herbs. If you don't want these to be too spicy, reduce the chilli.
Flatten out the chicken thighs and place in the bowl (one at a time) with the spice / flour mix and fully coat. The chicken doesn't need to be dipped in egg first but does need to be slightly wet to allow the coating to stick. The thighs are normally good to use straight from the packet, but if they've been opened and dried outa little, just rinse them in a little cold water before adding them to the flour mix.
Lay the chicken thighs on a roasting tray and cook for 35-40 minutes. In a Ninja Foodi / Air Fryer, they may take less time.
