This was part of a selection of buffet food for the freezer, created for the Michele's Keto Kitchen workshop.
Makes 6 portions.
With milled linseed, each portion contains: 201 Calories / 0.7g Carbs / 32.9g Protein / 7g Fat
With ground almonds, each portion contains: 208 Calories / 0.9g Carbs / 32.8g Protein / 8g Fat
Ingredients

85g Ready Grated Mozzarella

15g Cream Cheese
-
35g Ground Linseed or Ground Almonds

700g Chicken Breast, diced into bite size chunks

Seasoning of your choice, I put 1 tbsp of Curry Blend

Salt and Pepper
MKD (Michele's Keto Dough) Bread Crumbs

MKD
Oven 180C
Put all the MKD ingredients into a microwave bowl
Microwave in 30 second blasts (normally a total of 90 seconds)
Mix together with a spoon, until a smooth dough ball forms
Roll out immediately, on a sheet of greaseproof paper, and put on an oven tray, and pop in the oven for 10 to 15 minutes, till nice and crispy
Leave the oven on, whilst you do the next step, until the chicken is ready to cook
Allow the MKD to cool. Add the cooled MKD to a bullet. Season well, add the Curry blend & Blitz, till they resemble bread crumbs
Put the bread crumbs into a bowl. Start dunking your chicken into the bread crumbs, completely cover it
Lay these out onto to a lined baking tray and pop into the oven for about 20 -25 minutes (until chicken is cooked)
