Egg muffins are a great grab-and-go snack. The macros are calculated for the bacon and mushroom muffins, but try experimenting with different combinations!
Makes 9 muffins - each muffin contains:
114 Calories / 0.6g Carbs / 8.2g Protein / 8.9g Fat

Ingredients

180g Button Mushrooms
-
4 Rashers of Bacon
-
20g Butter
-
6 Large Eggs
-
30g Soured Cream
-
Mushrooms & Peppers
-
Stilton & Broccoli
-
Asparagus & Bacon

Directions
Preheat the oven to 180°C.
Dice the mushrooms and cut the bacon into strips.
Add the butter to a pan over a medium heat and fry the bacon & mushrooms. Cook for 5-8 minutes.
Once cooked, equally divide the mix between the cases. These are best made in either silicone cupcake cases / moulds or a non-stick muffin tray.
Whisk the eggs and soured cream and fill each case equally.
Bake for 15-20 minutes. The muffins will sink whilst cooling down.
