Whilst both psyllium husk and vital wheat gluten can act as binders in this recipe, they tend to act differently. Provided that you don't have an issue with gluten, we'd suggest using the vital wheat gluten if you're making something like a suet pudding. Psyllium can give a slightly flakier pastry which can be more difficult to handle. This may mean the pastry will have to be thicker.
Makes 4 portions - each portion contains:
214 Calories / 3.1g Carbs / 3.9g Protein / 18.5g Fat
Mix the dry ingredients together in a bowl.
Add a tablespoon of water at a time until it forms a dough.
Wrap in cling film and allow to rest for around 20-30 minutes in the fridge.
Either divide into equal portions for small pies or roll between 2 sheets of greaseproof paper.
