Makes 4 portions - each contains:

Macros calculated using the 90 second bread as the breadcrumbs.
As with all UK foods the carbs listed above are already net carbs. Do not subtract the fibre.

Ingredients

30ml Olive Oil or Coconut Oil

100g Shallots, finely chopped

1-2 Garlic Cloves, finely chopped

80g 'Breadcrumbs' (e.g. one 90 second bread)

1/4 tsp Ground Nutmeg or a good grating of Fresh Nutmeg

500g Pork Mince (5% Fat)

1 Large Egg
-
300ml Beef Stock (we use homemade bone broth - if it’s particularly strong, we’ll water it down)

1-1.5 tsp Dijon Mustard

50g Soured Cream
-
Salt & Pepper

Fresh herbs to garnish
Directions
Heat 1 tbsp oil in a pan and finely chop the shallot. Add to the pan and cook until soft and translucent.
Add the garlic and cook for a further minute and then leave to cool.
Mix the pork mince, breadcrumbs, shallots, egg, nutmeg and seasoning until combined then form 16 meatballs. Chill the meat balls for 15 mins in the fridge.
Heat the remaining oil in the pan. Add your chilled meatballs and cook for 5 - 10 mins, turning occasionally until browned all over.
Add the stock and simmer for around 8-10 mins to reduce slightly.
Stir in the mustard and soured cream, season to taste and serve.
Recipe Notes
TOP TIPS
- In the photo, we served these with swede mash and salad. Peel & chop the swede into cubes, parboil for 10-15 minutes, drain and allow to dry in a collander for a few minutes. Blitz in a food processor with a good knob of salted butter (around 30g butter for 200g swede). Job done!
