Pickled Cucumbers / Gherkins

These make for a great side to a salad or our homemade burgers.
Makes 4 portions (50g cucumber each) - each portion contains:
7 Calories / 0.6g Carbs / 0.5g Protein / 0.3g Fat
200g Mini Cucumbers (we get ours from Lidl)
750ml Vinegar (we use Distilled White Whine Vinegar)
Optional: 100ml Apple Cider Vinegar
Seasoning e.g. Chilli Flakes, Peppercorns, or Garlic Cloves
Slice the mini cucumbers any way you like (or leave them whole if you want).
Place them in the storage jar and cover them with the vinegar. Add your own seasoning, fit the lid and pop them in the fridge.
They will take 3-4 days to soften and, providing you keep the pickles under the vinegar level, will keep for several months in the fridge.
