We like to serve this in our Cheesy Wraps with a choice of protein.
Makes 2 portions (not including the choice of protein) - each portion contains:
119 Calories / 5.9g Carbs / 1.7g Protein / 9.8g Fat
20ml Olive Oil or 20g Butter
50g Shallots or Leeks, finely chopped
2 Garlic Cloves, finely chopped, or 1 tsp Garlic Puree
100g Red peppers, finely sliced
100g Green Peppers or Courgettes, finely sliced
1 tsp Paprika
1/4 tsp Hot Chilli Powder
1/2 tsp Dried Thyme
Salt & Pepper to taste
Optional: Chilli Flakes
Pair with your choice of protein. We use around 150-200g (raw weight) Mini Chicken Fillets / King Prawns / Halloumi / Paneer per person.
Heat the oil / butter over a gentle heat in a large frying pan.
Add the shallots and garlic and fry for 1-2 minutes.
Keep the heat low and add the paprika, cayenne pepper, and mixed peppers.
Fry over a medium heat to bring everything together for 1-2 minutes to keep the peppers crunchy.
