Spiced Red Cabbage

A lovely low carb addition to a roast dinner.

Ingredients

50g Butter
-
500g Red Cabbage
-
75ml Boiling Water
-
15ml Apple Cider Vinegar or White Wine Vinegar

1/2 tsp Mixed Spice
-
1/2 tsp Ground Cinnamon
-
2 Whole Star Anise
-
4 Whole Cloves
-
1 Medium Bramley Cooking Apple (around 200g), peeled and cut into chunks

Salt to taste
Directions
Gently melt the butter in a saucepan and remove from the heat once melted.
Add all the red cabbage and water to the pan.
Place the pan back on the stove on a low heat and place a lid on top.
After approx. 3 minutes or when the pan starts to sizzle, stir the cabbage.
Remember to continuously stir the cabbage, never allowing it to stick to the bottom of the pan.
Add the remaining ingredients (except the apples & salt) to the cabbage.
Cook on a very low heat for 20 minutes, continuously stirring.
Add the apples and cook for another 20 minutes, still on a low heat, to soften the apples.
Add salt to taste at the end.
