I never used to have marmalade....but now I love it at the weekend, for a cheeky mid afternoon treat, on a little well-buttered Megga Loaf.

Ingredients

1.4kg (1400g) Oranges

30g Truvia / Natvia / Pure Via Sweetener, plus more to taste

500ml Water

1 tsp Vanilla Extract

1-2 tsp Lemon Juice
Directions
Slice the oranges in half, and then into thin slices. You can leave the skin on for a thick-cut marmalade, or grate the skin off before cutting for a fine marmalade. Remove any seeds.
Add these to a large saucepan with the water and sweetener, bring to boil and then turn down to simmer for 1 hour and 15 minutes
Test that the marmalade is ready by spooning a small amount onto a chilled plate (place the plate in the freezer before hand). Let it cool for 30 seconds and tilt the plate to make sure a soft gel has formed. It should wrinkle on the top, which indicates that it’s ready. It will continue to thicken as it cools
If the marmalade isn’t done, cook for a further 10 minutes and test again
Turn the heat off, add the vanilla and lemon juice and mix
Let the marmalade cool completely, uncovered, before spooning into an airtight jar. This should last up to three months.
