150g Ground Almonds, Ground Pecans, or other milled seeds like linseed (or a mix)
50g Unsalted Butter
100g Mixed Frozen Berries
10g Chia Seeds
100g Unsalted Butter
100g Ground Almonds
1 Large Egg
1/2 tsp Almond Extract
15g Flaked Almonds
Preheat the oven to 180°C.
Melt the butter and mix with the other base ingredients.
Line a 6" tin and spread the mix in evenly. Bake for 10-12 minutes until slightly golden.
Mix the berries with the chia seeds and sweetener. Cook over a medium heat for 10-15 minutes.
Once the base is cooked, mix the jam and mash any large berries, then pour this on top of the base. Yo could strain off any liquid from the jam before doing this.
Melt the butter in the microwave and then add the ground almonds, sweetener and almond extract. Mix well and then add the egg to create a smooth paste.
Spread the frangipane over the jam and sprinkle the flaked almonds on top.
Bake for 30 minutes or until golden.
