Choc Chip Cookies
100g Unsalted Butter
1 tsp Vanilla Extract
115g Ground Almonds
1/2 tsp Baking Powder
1/2 tsp Xanthan Gum
1 Large Egg
50g 85% Dark Chocolate
Preheat the oven to 180°C.
Melt the butter in the microwave or over a pot of boiling water.
Add the sweetener and vanilla extract and whisk.
Add the ground almonds, sweetener, baking powder and xanthan gum, mix, and then add the egg. Mix again.
Chop the dark chocolate into chips and combine. Or, for crispier cookies, leave the chocolate aside for later.
Line a tray with greaseproof baking paper or use a silicone tray.
Using wet hands, separate the mix and press the cookies into shape. They won't spread out in the oven so press them out into the shape that you'd like them. For crispier cookies, press them out as flat as possible.
Bake for 15 minutes or until golden. You may want to flip them over to allow them to go golden on both sides. Be careful; they're quite squishy when they first come out of the oven!
Allow to cool fully. For the crispier cookies, melt the chocolate and spread a layer (or delicately drizzle) over the top of the cookies.
