Chocolate & Coconut Milk Mousse
400g Tinned Coconut Milk (highest % coconut extract possible - some of the best are from Aldi or Lidl)
60g Chia Seeds (whole or milled) - If your coconut milk is below 70% coconut you will need to add more chia seeds to thicken. Use up to 100g for a 40-50% coconut milk
20g Cocoa Powder
Truvia / Natvia / Pure Via Sweetener to taste
Mix all ingredients in a large bowl until the mixture is smooth.
Divide the mix into 4 bowls and allow to set in the fridge for 10 minutes.
To add extra sweetness mix either 1 tsp of vanilla extract or a total of 50g raspberries (fresh or frozen) to the mix.
