Classic Vanilla Muffins

Makes 12 small muffins - each muffin contains:
128 Calories / 0.8g Carbs / 3.8g Protein / 11.9g Fat / 1.2g Fibre (already deducted from carbs)
Makes 6 larger muffins - each muffin contains:
256 Calories / 1.6g Carbs / 7.6g Protein / 23.8g Fat / 2.4g Fibre (already deducted from carbs)
120g Double Cream or Tinned Coconut Milk (as high % coconut as you can find)
2 Large Eggs
1 tsp Vanilla Extract
130g Ground Almonds
1 tsp Baking Powder
Pinch of salt
Optional: 25g 85% Dark Chocolate, chopped into small pieces
Preheat the oven to 180°C.
In a large bowl, add the cream. eggs and vanilla extract and mix.
Add the remaining ingredients and mix again. Taste and adjust the sweetness if necessary.
Divide the mix into silicone cupcake cases.
Bake for 15-20 minutes or until golden.
