We don't recommend using this as a cereal - focus on the protein for your meals rather than use this as your break-fast. We use this to sprinkle on top of Greek yogurt for a lovely dessert.
Makes 12 portions - each portion contains:
105 Calories / 0.8g Carbs / 2.2g Protein / 10.1g Fat
Ingredients
-
100g Nuts of your choice (e.g. Almonds, Pecans, Brazil Nuts, Hazelnuts)
-
45g Milled Linseed (or other milled nuts / seeds)
-
15g Flaked Almonds
-
25g Coconut Oil or Unsalted Butter
Directions
Preheat the oven to 180°C.
Roughly chop the nuts of your choice (except the flaked almonds) in a food processor or by hand. You still want some chunks to give the granola a crunch.
Add the nuts to a mixing bowl along with the seeds, flaked almonds and sweetener.
Melt the coconut oil or butter in the microwave and add this to your dry ingredients. Mix to coat the nuts and seeds in the oil.
Spread the granola mixture onto a baking tray lined with greaseproof paper (or a silicone mat) and bake for about 10 minutes or until golden brown. Be careful - they'll burn quickly!
