This biscuit was created for the Tiffin recipe, then became a favourite out right!
Makes 2 portions - each portion contains:
313 Calories / 4.3g Carbs / 9.4g Protein / 28g Fat
15g Coconut Oil
1 Egg Yolk
1/2 tsp Vanilla Essence
55g Ground Almonds
10g Choc Chips (we use chopped up 85% dark chocolate)
Melt the coconut oil and allow to cool for a moment.
Add all the other ingredients to this and mix well until a crumble texture forms.
Now use your hands to form a doughball.
Grease a microwave plate or line with greaseproof paper.
Cut the dough ball in half.
Take one half of the dough ball and press onto a plate to create a cookie shape.
Cook one cookie in the microwave for 30 seconds. Cook for a further 30 seconds.
Allow to cool and repeat with second cookie.
Wrap the cookies in cling film or an airtight container
