It's an attempt at copying a nut bar that my husband loves which we buy from a local supermarket. He loves mine more...Boom!

It's really quick and easy to make and well worth it too!
Makes 10 slices.
Using caramel #1, each slice contains: 236 Calories / 3.1g Carbs / 6.5g Protein / 21.2g Fat
Using caramel #2, each slice contains: 269 Calories / 4g Carbs /5.3g Protein /25.1g Fat
Macros for caramel #1 do not include the Werthers as it is unclear how many of the carbs on the packet are from polyols. The sweeteners used in the Werthers' are isomalt and acesulphame-K. These are low carb due to their low GI, but they're not clean keto.
Utensils
Small non stick saucepan
Small brownie type tin or plastic container. I used a tin 7inch square
Greaseproof paper or silicone paper
Ingredients

100g 85% Dark Chocolate

150g Mixed Nuts
-
75g Mixed Seeds
Caramel #1

12 Sugar Free Werthers (harboiled, not chewy)

30g Unsalted Butter
-
30g Double Cream
Caramel #2

100ml Unsweetened Almond Milk
-
50g Unsalted Butter
-
30g Double Cream
-
10g Coconut Oil (we use Cooking Coconut Oil which has no taste or smell)

1 tsp Vanilla Extract
-
10g Truvia / Natvia / Pure Via Sweetener (add to taste)
Directions
Melt all the chocolate in the microwave in 30 second blasts. It took me 3 minutes.
Pour the chocolate into your lined tin, BUT reserve about a tablespoon or 10g, for drizzling on top.
Caramel #1
Put your Sugar Free Werthers, cream and butter in a small non stick pan.
Stir continuously until the sweets have melted and a thick sauce forms.
Caramel #2
Add the almond milk, butter and cream to a small saucepan and heat over a low-medium heat, stirring continuously. Allow the almond milk to reduce until the sauce starts to thicken slightly and become glossy.
Take the pan off the heat and allow the sauce to cool for around 5 mins it may split.
Add the coconut oil and stir to allow it to melt. Stir until the sauce becomes glossy again.
Add the sweetener & flavourings now - adjust these to suit your taste.
Back to the bars
Add the nuts & seeds to the caramel and stir until completely coated. Add small blobs on top of the melted chocolate, until the chocolate is completely covered.
Press into the chocolate, with a spoon until nice and even.
Now drizzle the remaining melted chocolate all over the nut layer.
Allow to set (this is quicker in the freezer) for about 30 minutes :-)
Finally, you'll need a super strong knife and arm to slice this up!
