Vanilla Mug / Microwave Cake

Chop up some dark chocolate and add them to the mix to create little pockets of melting cocoa, or add a heaped teaspoon of instant coffee to give it more depth. Or do both at the same time. We're not judging.
If you don't have any protein powder, swap it for more coconut flour (10g) or even 10g almond butter (this one's delicious!).

1 Large Egg
60ml Unsweetened Almond Milk
10g Coconut Flour
10g Vanilla Protein Powder (we use the MyProtein Vanilla Whey) - see the description above for substitutions.
5g Truvia / Natvia / Pure Via Sweetener (add more of this if you're not using the protein powder)
1/2 tsp Baking Powder
Add all of the ingredients into a microwaveable dessert bowl / mug and mix until fully combined.
Microwave for 60-90 seconds depending on the strength of your microwave. The muffin shouldn't be 'tacky' to touch but it may still be a little gooey at the bottom :)
We've also baked this in the Ninja Foodi (you could also use an oven) at 200c on the 'bake' setting for around 15 minutes. We even added a spoon of homemade jam in the centre of the cake before baking!
