We serve this with buttered cabbage or courgetti and of course grated cheese on top!
Makes 4 portions - each portion contains:
275 Calories / 6g Carbs / 41g Protein / 9g Fat
(Does not include the optional addition of mascarpone or soured cream)

Ingredients

30 ml Olive Oil / Butter / Coconut Oil

500g Turkey Mince (2% Fat)

100g Leeks, finely chopped

200g Sliced Mushrooms
-
1 tsp Dried Mixed Herbs

2 Garlic Cloves (chopped) or 1 tsp Garlic Powder

400 gm (1 tin) Chopped Tomatoes

Optional : for a creamy sauce, add 100g mascarpone / soured cream
Directions
Heat the oil / butter over a medium heat and gently fry the leek and garlic for around 3-5 minutes.
Turn the heat up a little, add the mushrooms and fry for a further 3-5 minutes.
Either remove the mushrooms & leeks from the pan or move to one side.
Add the turkey mince and using a spatula break the meat into small pieces.
Cook the turkey to ensure all the meat turns from pink to white and then combine with the mushrooms & leeks.
With the heat on high add the chopped tomatoes, herbs and seasoning. Bring to boil, cover pan with a lid and reduce heat to low.
Allow to cook for 15-20 minutes on a low heat covered.
To reduce the sauce, remove the lid and turn the heat up to medium / high. Cook for 5-10 minutes.
Add mascarpone / soured cream for a creamy sauce.
