2 Large Eggs
7g Chia Seeds
1.5 tsp Vanilla Extract
1/2 tsp Bicarbonate of Soda
1/4 tsp Salt
20ml/g Lemon Juice
Preheat the oven to 180°C.
Mix all of the ingredients except the lemon juice in a bowl until smooth.
Add the lemon juice and mix again. This will react with the bicarbonate of soda, resulting in the mix starting to foam slightly.
Transfer the mix to a lined loaf tin. Ours is a mini loaf tin: 9cm x 15cm.
Bake for around 30 minutes until firm. The bread will not rise much but should have a good crust all the way round.
